Apple kohlrabi salad

Even if you’re not a kohlrabi lover, you’ll love this salad, because its combination of flavors is fantastic. This vegetable contains only a few calories but it will make you full for hours. You need only 20 minutes for this dish. Try it out and let me know your impressions.

Ingredients:
¼ cup extra-virgin olive oil
1 tbsp apple cider vinegar
2 tsp organic honey
1 tsp Dijon mustard
½ tsp salt + 1 more pinch of salt
1 larger apple, pitted and chopped into sticks
1 medium-sized kohlrabi, peeled and chopped into sticks
¼ cup red onion, thinly chopped
¼ cup hazelnuts, mildly roasted, cut in half
¼ cup fresh parsley leaves, chopped + a bit for decoration
a pinch of black pepper

Instructions:
1. Pour extra-virgin olive oil, apple cider vinegar, organic honey, Dijon mustard, and salt in a big bowl, then stir well to combine.
2. Add apple, kohlrabi, onion, hazelnuts, and parsley leaves, then stir again.
3. Season with a pinch of salt and black pepper and decorate with parsley leaves.
4. Serve and enjoy.
