Buddha Bowl 3

This is my Buddha bowl no. 3 salad, where I used grilled chicken as a protein. It’s very easy to make it and the great thing is you can always pack it for the go. This colorful meal will open your appetite for sure. 🙂 How do you like it?

Ingredients:
4 tbsp cooked quinoa
1 handful broccoli
½ red peppers, finely chopped
½ cup red cabbage, chopped into strips
1 tbsp pumpkin oil
1 tsp lemon juice
salt to the taste
1 spring onion, use green part for decoration
1 tbsp of parsley leaves, finely chopped, for decoration

Instructions:
Serve all of the ingredients in a bowl and pour dressing made of pumpkin oil and lemon juice. Garnish with spring onions and parsley leaves, then season to taste and serve.
