Chia blueberry jam with oatmeal

Ingredients:

For the chia blueberry pudding (for 2 cups):
2 cups blueberries
2 tbsp maple syrup
1 tbsp fresh lemon juice
1 tbsp vanilla extract
½ tbsp ground cinnamon
3 tbsp chia seeds
a pinch of Himalayan salt

For the oatmeal (1 serving):
½ cup of oatmeal
½ cup unsweetened almond milk
1 tbsp blueberry jam you made earlier
½ tbsp lemon peel, grated
¼ cup blueberries

Instructions:
To make the blueberry chia jam: in a medium-sized saucepan over medium heat, cook blueberries, lemon juice and vanilla extract for 3 to 5 minutes, stirring continuously. Then, add the maple syrup, cinnamon and salt and remove from the heat. Mix the resulting mixture with the chia seeds and put them all together in a glass jar. Let it cool slightly, then leave the jar in the refrigerator for at least an hour. If the pudding is not thick enough, add more chia seeds. After that, pour the oatmeal into another glass jar or a glass, then add the almond milk, a layer of chia jam, blueberries and lemon peel, and refrigerate overnight to have your breakfast ready in the morning.
