If you\u2019re vegan or vegetarian, I recommend that it be at least 5 times a week, because that way you\u2019ll provide enough protein to your body. Let this dish be on your meal list. Enjoy!<\/p>\n<p><strong>Preparation time:<\/strong> 45 minutes<br \/>\n<strong>Servings:<\/strong> 4-6<\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n\u00bc cup water<br \/>\n\u2154 cup onion, finely chopped<br \/>\n1 tbsp fresh ginger, grated<br \/>\n3 garlic cloves, mashed<br \/>\n4-6 cup green curry paste (Look for the recipe below.)<br \/>\n2 medium-sized sweet potatoes, peeled and diced<br \/>\n2 tbsp balsamic vinegar<br \/>\n1 tsp curry powder<br \/>\n1 \u00bd cup unsweetened coconut milk<br \/>\n\u00bd cup vegetable broth or water<br \/>\n2 cup chickpeas, already cooked<br \/>\n\u00bd tsp agave syrup or coconut sugar<br \/>\n3 cup baby spinach<\/p>\n<p><strong>Decoration (optional):<\/strong><br \/>\nA pinch of red chili pepper flakes<br \/>\nA pinch of fresh ginger, grated<\/p>\n<p><strong>Instructions:<\/strong><br \/>\n1. Pour the water in a large pot, add onion and ginger and simmer at moderate temperature, stirring frequently for 3-4 minutes, until onion becomes transparent.<br \/>\n2. Add the garlic and simmer for a few more minutes. Then add green curry paste and stir. Cook for 2 more minutes.<br \/>\n3. Add the sweet potato, 1 tbsp balsamic vinegar, and curry powder, then stir until all the ingredients combine. Cook 2-3 minutes. Then add unsweetened coconut milk, vegetable broth or water, and another tablespoon of balsamic vinegar and stir. Cook at moderate temperature until boil.<br \/>\n4. Add the chickpea and lower the temperature.<br \/>\n5. Cover with a lid and cook for 10-12 minutes, stirring occasionally.<br \/>\n6. After that, add the agave syrup or coconut sugar. Add the spinach, then cook for another 2-3 minutes. Turn off the stove and leave uncovered to rest for a few minutes before serving.<br \/>\n7. Decorate as desired, serve and enjoy.<\/p>\n<p><strong>Green curry paste ingredients:<\/strong><br \/>\n\u00bd tsp ground coriander<br \/>\n1 tsp ground cumin<br \/>\n\u00bd tsp black pepper<br \/>\n3 small green chili pepper, cleaned, finely chopped<br \/>\n1 green pepper, cleaned, finely chopped<br \/>\n5 garlic cloves, mashed<br \/>\n6 spring onion stalks, finely chopped<br \/>\n1 tsp ground ginger<br \/>\n1 tsp ground turmeric<br \/>\n\u00bd tsp salt<br \/>\n3 tbsp lemon juice<br \/>\n1 lime \u2013 juice and grated peel<br \/>\n2-3 tbsp grapeseed oil<br \/>\n1 tbsp coconut sugar<\/p>\n<p><strong>Instructions:<\/strong><br \/>\n1.
