Roasted beet salad with plums and walnuts will help you with that. Beets are considered one of the healthiest vegetables, so I advise you to include them in your menu whenever you can. In this salad, the sour taste of beets and plums will break the slightly pungent taste of walnuts. Great combination.<\/p>\n<p><strong>Preparation time:<\/strong> 30 minutes<br \/>\n<strong>Servings:<\/strong> 3-4<\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n4 large beets, peeled and chopped in spirals<br \/>\n1 tbsp olive oil<br \/>\n4 ripe plums, chopped into small pieces<br \/>\n60 g walnuts<br \/>\n1 handful of fresh mint leaves<\/p>\n<p><strong>Dressing ingredients:<\/strong><br \/>\n1 \u00bd tbsp extra-virgin olive oil<br \/>\n\u00bd tbsp red wine vinegar<br \/>\n\u00bd tbsp balsamic vinegar<\/p>\n<p><strong>Instructions:<\/strong><br \/>\n1. Pour 1 tbsp olive oil in a pan lined with baking paper, arrange the beets and bake in the oven at 180 \u00b0C for about 15 minutes.<br \/>\n2. While the beets are baking, mix all the dressing ingredients in a jar.<br \/>\n3. Take the beets out, then mix with plums, walnuts, and fresh mint. Season with dressing.<br \/>\n4.
