This is a perfect summer salad, but you can prepare it all year round. I think you\u2019ll like it as much as I do. Look below for the recipe.<\/p>\n<p><strong>Preparation time:<\/strong> 30 minutes<br \/>\n<strong>Servings:<\/strong> 2-4<\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n1 cup cooked quinoa, strained<br \/>\n\u00bd cup cooked chickpeas, strained<br \/>\n3 oranges, peeled and cut into rings<br \/>\n\u00bd red onion, diced<br \/>\n\u00bd cup dry cranberries<br \/>\n3-4 tbsp fresh mint leaves, finely chopped<br \/>\n3-4 tbsp fresh parsley leaves, finely chopped<br \/>\n1 handful of rocket salad<\/p>\n<p><strong>Dressing ingredients:<\/strong><br \/>\n\u00bc cup apple cider vinegar<br \/>\n1 orange juice<br \/>\n1 tbsp olive oil<br \/>\n1 garlic clove, mashed<br \/>\nsalt and black pepper to taste<\/p>\n<p><strong>Instructions:<\/strong><br \/>\n1. Cook the quinoa and chickpeas following the packaging instructions, strain them and set them aside.<br \/>\n2. Mix all of the dressing ingredients in a small bowl, then set the dressing aside.<br \/>\n3. In a large bowl, mix the quinoa, chickpeas, orange slices, red onion, cranberries, fresh mint leaves, fresh parsley leaves, and rocket, then coat everything with the dressing.<br \/>\n4.
