If you like coconut, this one may be even tastier. Instead of cow\u2019s, I used coconut yogurt, for which I also wrote you a recipe. Look below for precise instructions.<\/p>\n<p><strong>Preparation time:<\/strong> 15 minutes<br \/>\n<strong>Servings:<\/strong> 2-4<\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n\u00bd cucumber, unpeeled and grated<br \/>\n1 \u00bd cup coconut yogurt (Recipe is below.)<br \/>\n3 garlic cloves, mashed<br \/>\n\u00bc cup fresh dill, finely chopped<br \/>\na pinch of salt<br \/>\na pinch of black pepper<br \/>\n1 \u00bd tbsp lemon juice<br \/>\n1-2 tbsp extra virgin olive oil<\/p>\n<p><strong>Decoration (optional):<\/strong><br \/>\na few blueberries<br \/>\n\u00bd handful of walnuts<br \/>\ndill<br \/>\na few carrot sticks<\/p>\n<p><strong>Instructions:<\/strong><br \/>\n1. Finely grate cucumber and strain it. After straining, you should have \u00bc cup of cucumber.<br \/>\n2. Pour coconut yogurt in a large bowl, then add strained cucumber, garlic, dill, salt, black pepper, lemon juice, and extra virgin olive oil. Stir until combined.<br \/>\n3. Serve and enjoy.<\/p>\n<p><strong>Coconut yogurt ingredients:<\/strong><br \/>\n1 \u00bd cup full-fat coconut milk<br \/>\n2 probiotic capsules<\/p>\n<p><strong>Instructions:<\/strong><br \/>\n1. Shake the coconut milk well. Open it and pour it into a clean, sterilized, dry glass jar or bowl.<br \/>\n2. Pour the content of the probiotic capsules into yogurt, then use a wooden or plastic spoon for mixing. The metal spoon could negatively react with probiotics. 3. Stir until creamy and smooth.<br \/>\n4. Cover the mixture with gauze and secure it with a rubber band.<br \/>\n5. Leave the yogurt in a warm place for 24 to 48 hours. The longer it stays, the denser it will be.<br \/>\n6. When the yogurt reaches the desired density, cover it with a lid and leave it in the fridge to cool down.
