Lemon will actually help the body absorb iron from kale, thanks to a large amount of vitamin C. Besides these two ingredients, I added brown rice to make this salad saturate you.<\/p>\n<p><strong>Preparation time:<\/strong>  25 minutes<br \/>\n<strong>Servings:<\/strong> 2 <\/p>\n<p><strong>Salad ingredients:<\/strong><br \/>\n1 tbsp olive oil<br \/>\n4 cups kale, finely chopped<br \/>\n2 cups cooked brown rice<br \/>\na pinch of salt<br \/>\na pinch of black pepper<br \/>\na handful of dried cherries<\/p>\n<p><strong>Dressing ingredients:<\/strong><br \/>\n1 lemon juice<br \/>\n1 orange juice<br \/>\n\u2153 cup olive oil<br \/>\n1 garlic clove, mashed<br \/>\n\u00bd cup parsley leaves, finely chopped<br \/>\n\u00bc tsp salt<br \/>\n1-2 tsp raw organic honey<\/p>\n<p><strong>Instructions:<\/strong><br \/>\n1. Pour the dressing ingredients into a small bowl, then stir until combined. Set aside the resulting dressing.<br \/>\n2. Heat the olive oil in a large pan at moderate temperature. Add kale, salt, and black pepper, then simmer for a few minutes<br \/>\n3. Add pre-cooked brown rice and simmer for another few minutes with kale. Remove the pan from the heat.<br \/>\n4. After that, add the dressing and stir until combined.<br \/>\n5. Sprinkle dried cherries over the salad.<br \/>\n6. You can serve the salad warm or cold.<br \/>\n7.
