I love sweet potato because it is very similar to red or white potato, but contains much more protein. A big difference is that this sweet vegetable has a low glycemic index, which means it provides slow glucose absorption, which makes it suitable for diabetics.<\/p>\n<p><strong>Preparation time:<\/strong> 1h 15 minutes<br \/>\n<strong>Servings:<\/strong> 3-6 (if you cut the sweet potato in halves)<\/p>\n<p><strong>Sweet potato ingredients:<\/strong><br \/>\n3 large sweet potatoes<br \/>\n1 \u00bd cup broccoli, chopped into florets, steamed<br \/>\n1 avocado, sliced<br \/>\n2-3 tbsp sriracha sauce, by sweet potato<\/p>\n<p><strong>Instructions:<\/strong><br \/>\n1. Preheat the oven at 180 \u00b0C.<br \/>\n2. Clean sweet potato and sting with a fork in several places.<br \/>\n3. Put the sweet potato in a pan, previously lined with baking paper, and bake for about 45 minutes.<br \/>\n4. In the meantime, prepare sriracha sauce by the instructions below.<br \/>\n5. Before the end of baking, or while the sweet potato cools down, steam the broccoli for about 2-3 minutes.<br \/>\n6. Cut the sweet potato through the middle to make a hole. Stuff it with avocado and broccoli, and coat with sriracha sauce.<br \/>\n7. Serve and enjoy.<\/p>\n<p><strong>Sriracha sauce ingredients:<\/strong><br \/>\n\u00bd cup raw cashews, soaked in hot water<br \/>\n1 red pepper, chopped into small pieces<br \/>\n3 garlic cloves, minced<br \/>\n1 \u00bd &#8211; 2 tsp red chili pepper flakes<br \/>\n1 tsp agave syrup<br \/>\n\u00bd tsp salt<br \/>\n1 tbsp apple cider vinegar<br \/>\n1 tbsp tomato paste<\/p>\n<p><strong>Instructions:<\/strong><br \/>\n1. Put all the ingredients in a blender and blend until smooth.<br \/>\n2. Try it and adjust the taste if needed. Leave to cool down.<br \/>\n3.
