The mixture of quinoa, beans, corn, and numerous spices is an excellent option for stuffing. The preparation instructions are straightforward, and you\u2019ll find them below.<\/p>\n<p><strong>Preparation time:<\/strong> 45 minutes<br \/>\n<strong>Servings:<\/strong> 4-6 <\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n1 cup cooked quinoa<br \/>\n2 cup vegetable broth or water<br \/>\n4 bell peppers, with seeds removed and cut in half lengthwise<br \/>\n\u00bd cup pelati, seasoned as desired + for decoration<br \/>\n1 tbsp nutritional yeast, as desired<br \/>\n2 tsp cumin<br \/>\nsalt and black pepper to taste<br \/>\n1 \u00bd tsp red chili pepper flakes<br \/>\n1 \u00bd tsp garlic powder<br \/>\n400 g black beans, cooked and strained<br \/>\n1 cup corn, cooked and strained<br \/>\n2 tbsp olive oil<\/p>\n<p><strong>Serving ingredients: <\/strong><br \/>\n1 avocado, sliced<br \/>\nlime juice<br \/>\n3 tbsp parsley leaves, finely chopped<br \/>\n2 tbsp red onion, finely chopped<br \/>\nsalsa sauce<\/p>\n<p><strong>Instructions:<\/strong><br \/>\n1. Pour the quinoa and vegetable broth into a pot, and cook until it boils. After that, lower the temperature, cover with a lid and quinoa for about 20 minutes, or until the liquid evaporates.<br \/>\n2. Mix the quinoa and the remaining ingredients, except peppers and olive oil, in a large bowl and mix until combined.<br \/>\n3. Preheat the oven at 180\u00b0C, and line the tray with baking paper.<br \/>\n4. Arrange the peppers in the tray, and coat with olive oil.<br \/>\n5. Stuff the peppers with the resulting quinoa mixture, and cover the tray with the foil.<br \/>\n6. Bake the peppers for about 30 minutes. Remove the foil, higher the temperature at 200 \u00b0C, then bake for another 15-20 minutes, or until soften.<br \/>\n7. Serve with desired ingredients and enjoy.<\/p>\n<div style='text-align:center'
