This risotto is tasty healthy, and you can enrich it with desired ingredients. My choice is asparagus and red bell pepper. The recipe is below.<\/p>\n<p><strong>Preparation time:<\/strong> 40 minutes<br \/>\n<strong>Servings: <\/strong>4 <\/p>\n<p><strong>Risotto ingredients:<\/strong><br \/>\n3 \u00bd &#8211; 4 cup vegetable broth<br \/>\n2 tbsp olive oil<br \/>\n1 bunch of asparagus<br \/>\n1 red bell pepper, diced<br \/>\n\u00bc tsp salt<br \/>\n\u00bc tsp black pepper<br \/>\n\u00be cup onion, finely chopped<br \/>\n1 cup brown rice<br \/>\n\u00bc cup white wine<br \/>\n\u00bc cup <a href=\"https:\/\/totallywellness.rs\/en\/recipe\/vegan-parmesan\/\" rel=\"noopener\" target=\"_blank\">vegan parmesan<\/a> + for decoration<br \/>\nparsley leaves, finely chopped, for decoration<\/p>\n<p><strong>Instructions:<\/strong><br \/>\n1. In a medium-sized pot, heat the vegetable broth at moderate temperature. When it boils, lower the temperature to the lowest.<br \/>\n2. In the meantime, pour the olive oil into a large pan, heat it, add asparagus and red bell pepper, and simmer for 3-4 minutes, stirring frequently. Leave to rest.<br \/>\n3. Add the remaining tbsp of olive oil and onion to another large pan, and simmer for 1-2 minutes. Add brown rice and simmer for about 1 minute. Add white wine, stir, and cook for 1-2 minutes until the liquid evaporates.<br \/>\n4. Using a spoon, start adding half a cup of vegetable broth. The temperature should be moderate, so risotto cooks gradually. Cook the dish until the rice is \u201cal-dente,\u201d or for 15-20 minutes.<br \/>\n5. When the risotto is cooked, season it with salt and black pepper. Add vegan parmesan and vegetables.<br \/>\n6.
