The recipe is below.<\/p>\n<p><strong>Preparation time:<\/strong> 15-20 minutes<br \/>\n<strong>Servings:<\/strong> 2 <\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n3 smaller gluten-free corn tortillas<br \/>\n3 eggs<br \/>\n1 tbsp olive oil<br \/>\n3 cups of spinach<br \/>\na pinch of salt<br \/>\na pinch of pepper<br \/>\n\u00bd of avocado, sliced<br \/>\n1 jalape\u00f1o pepper, finely chopped<\/p>\n<p><strong>Instructions:<\/strong><br \/>\n1. Heat the olive oil in a pan at moderate temperature. Pour in the eggs and add the baby spinach, a pinch of salt and pepper, and stir until you get scrambled eggs.<br \/>\n2. Place the resulting scrambled eggs with baby spinach on gluten-free tortillas, add avocado and jalape\u00f1o peppers, and fold them.<br \/>\n3.
