Chinese cabbage salad
Have you ever heard of Chinese cabbage? It’s a variety of cabbage that has a very pleasant, mild aroma, which is why it goes perfectly with various foods. I mixed it with various vegetables and peanut dressing and got a great salad. The recipe is below.

Servings: 4
Ingredients:
½ cup almonds, finely chopped
3 cups Chinese cabbage, finely chopped
3 cups red cabbage, grated
1 red pepper, chopped into sticks
1 cup carrots, grated
1 cup edamame
½ cup parsley leaves, finely chopped
Dressing ingredients:
½ cup apple cider vinegar
2 tbsp raw organic honey
2 tbsp soy sauce
1 tbsp peanut butter
1 tbsp ginger powder
Instructions:
1. Preheat the oven at 180 °C. In a pan, lined with baking paper, arrange the almonds, and bake them for 4-6 minutes, until crispy. Set them aside.
2. In a large bowl, mix Chinese and red cabbage, pepper, carrot, edamame, and parsley leaves, and stir everything well.
3. In a small bowl, pour the dressing ingredients and stir until smooth.
4. Pour the resulting dressing over salad, and sprinkle with roasted almonds.
5. Serve and enjoy.
