Adzuki pumpkin and kombu soup
People that want to reduce their body weight should introduce this healthy type of bean in their diet. Besides being rich in minerals and vitamins it contains protease inhibitors that prevent malignant cells from spreading. This is extremely important because a lot of people wanting to lose weight exclude important food rich in necessary nutrients and that additionally exhausts the body and causes weakening of the immune system. Adzuki beans are low in fats and rich in proteins that give you the feeling of being full while limiting calorie intake. Try this adzuki pumpkin and kombu soup.
Ingredients:
½ cup adzuki beans
6,5 cm kombu seaweed
2 cups pumpkin, chopped
1 bunch parsley, finely chopped
salt to taste
Instructions:
Rinse and soak for several hours or even overnight ½ cup of adzuki beans and kombu. Place kombu on the bottom of a pot and add the chopped pumpkin. Add the adzuki beans on top of the pumpkin. Add water. Don’t cover the pot. Bring it to boil and after 10-15 minutes put the lid on the pot. Cook over low heat until the beans are cooked through, for 45 minutes and then add sea salt. Cover and cook for another 15-30 minutes and at the very end add the parsley. Switch the stove off and let the dish sit for several more minutes. The best is not to stir the dish while preparing it. Serve and enjoy!
