Almond cherry granola bars
Almond cherry granola bars – yum! Not only does it sound fantastic, but this treat is truly delicious. You can prepare it quickly and easily, and no one will resist it, especially the youngest ones.
Preparation time: 40 minutes and 20 minutes to cool down
Servings: 9-12 bars
Ingredients:
1 ½ cup oats
¾ cup raw almonds, finely chopped
⅔ cup dates, pitted
⅓ cup dried cherries
¼ cup flaxseed
¼ cup almond butter
1 tbsp coconut oil
a pinch of salt
1 tsp vanilla extract
Instructions:
1. Preheat the oven at 180 °C and line the pan with baking paper.
2. Pour the oats and almonds into a pan, then bake them for 10-12 minutes, until golden.
3. Put the cherries and dates in a food processor and mix until smaller pieces remain or a ball forms, for about 20 seconds. The mixture should be sticky.
4. In a large bowl, pour baked almonds and oats, date and cherry mixture, flaxseed, and stir well. Set aside.
5. Heat almond butter and coconut oil in a small pot at moderate temperature. Mix until creamy and smooth. Remove from the heat, add a pinch of salt and vanilla extract, then mix again until combined.
6. Pour the resulting mixture in a bowl with the remaining ingredients, and stir well. The mixture should be sticky.
7. Pour the resulting mixture evenly in a ceramic bowl sized 20×20 cm, then put it in a freezer to harden. Take the bowl out of the freezer and cut the mixture into bars.
8. Serve and enjoy.
