Preparation time: 50 minutes
Servings: 6-8
Ingredients for apple filling:
4 apples, peeled, pitted, chopped into smaller pieces
1 tbsp apple cider vinegar
2 tbsp water
1 tsp cinnamon
¼ tsp ground cardamom
¼ tsp ground ginger
a pinch of salt
Ingredients for the crumble:
½ cup oats
½ cup almond flour
¼ cup walnuts, crushed
⅓ cup coconut sugar
½ tsp cinnamon
a pinch of salt
¼ cup solid coconut oil
Decoration:
¼ cup walnuts or pecan nuts
½ cup pomegranate seeds
Instructions:
1. To make the apple filling, mix apple slices, apple cider vinegar, and water in a pot, then cook it at low temperature, stirring occasionally, for about 15 minutes. Add the cinnamon, cardamom, ginger, and salt and stir well. Cook for a few more minutes until the apples soften. Leave to rest.
2. To make the crumble, mix the oats, almond flour, walnuts, coconut sugar, cinnamon, and salt in a smaller bowl. Then add solid coconut oil and mix it all with your hands to bring the ingredients together. If the mixture is too dry, add water.
3. Put the apple filling in a ceramic baking pan, spread the crumble over it, and bake it all together in the oven at 180 °C for about 15-20 minutes, or until the crumble gets crispy on top.
4. Sprinkle the pomegranate seeds and pecan nuts on top, if desired.
5. Serve and enjoy.
