Aromatic chickpeas beans salad
Since it contains a hefty dose of plant proteins, this aromatic salad with chickpeas and beans is great for vegans. A combination of dill, almond, and lemon juice gives it a unique flavor. I promise it will make you feel full.
Preparation time: 20 minutes
2 cups cooked beans
2 cups cooked chickpeas
¼ cup fresh dill, finely chopped
⅓ cup almonds, finely chopped and toasted
½ tsp red pepper flakes
2 tbsp extra virgin olive oil
1 tbsp lemon juice
a pinch of salt
a bit of black pepper
2 handful of baby mix salad
1. Cook the beans and chickpeas following the packaging instructions. You can also use canned beans and chickpeas but wash and strain them well before use.
2. Put all the ingredients in a large bowl, and stir—season to taste.
3. Serve with baby mix salad and avocado.
4. Serve and enjoy.
