Arugula, pumpkin and apple salad
Make this fantastic arugula, pumpkin, and apple salad that will delight everyone with its composition and irresistible taste.
Ingredients salad:
2 cups pumpkin, peeled and diced
1 tbsp extra virgin olive oil
salt and pepper to taste
½ cup walnuts
1 to 2 tsp maple syrup or another natural sweetener (ex: honey, agave, barley malt)
4 cups of arugula
1 apple, diced
⅓ cup cranberries
Ingredients dressing:
¼ cup apple cider vinegar
3 garlic cloves, minced
1 tsp Dijon mustard
2 tsp maple syrup or another natural sweetener (ex: honey, agave, barley malt)
salt and pepper to taste
¼ cup extra virgin olive oil
Preparation:
Preheat the oven to 200°C. Place the pre-cut pumpkin cubes in a tray and drizzle with olive oil, salt and pepper. Bake for about 45 minutes. When done, transfer them to a plate to cool. Reduce the oven temperature to 175° C. In the same tray place the walnuts and drizzle them with maple syrup and add a pinch of salt. Bake for 5 minutes. Remove the walnuts and allow them to cool. Whisk the dressing ingredients in a cup. Mix arugula, apples, pumpkin, cranberries and walnuts in a large bowl. Pour dressing over the salad and serve.
