Asian tofu salad

Asian dressing, lamb’s lettuce and smoked tofu create a magical blend of flavors. I recommend this salad for lunch or dinner because it is fulfilling and packed with useful nutrients for our health. Starting with iron, magnesium, calcium and other minerals, through vitamins C, A and B6. Try this Asian tofu salad.

Ingredients:
2 handfuls lamb’s lettuce
2 handfuls carrots, grated
2 spring onions, finely chopped
200 g smoked tofu, chopped into small cubes
3 tbsp extra virgin olive oil
2 tbsp lime juice
2 tbsp Tamari soy sauce
¼ tsp ginger powder
¼ tsp red pepper flakes
salt and pepper to taste
40 g roasted peanuts
1 tbsp fresh parsley leaves, finely chopped for decoration

Instructions:
Combine all ingredients. Mix the dressing ingredients and pour it over the salad. Sprinkle fresh parsley leaves on top. Serve.
