Avocado oil-free aioli

Aioli is a popular dip, used in many Mediterranian regions, including France, Italy, and Spain. Traditionally, it is made with a combination of garlic, egg yolks, oil, and lemon juice. In addition to classic aioli dressing, you can make different variants without oil. One of those is avocado aioli. This creamy, citrus aioli with garlic can be prepared in a blender in 5 minutes with only 6 ingredients.

Preparation time: 15 minutes
Servings: around 150 g or 1 medium-sized jar

2 avocados, pitted
1 egg yolk
2 garlic cloves, minced
2 tbsp lemon juice
½ tsp salt or more, to taste
a pinch of black pepper
2 tbsp parsley leaves, finely chopped

1. In a deeper bowl, mix avocado, egg yolk, garlic, lemon juice, salt, black pepper, and parsley leaves with a hand mixer.
2. Blend until smooth.
3. Keep the aioli in the refrigerator, and use it in the span of 24 to 48 hours.
4. Serve with the desired dish.
