Baby mix salad with chickpeas and arugula hummus

Since the colder days are approaching, it is time to enrich your menu with food that contains proteins and healthy fats because they warm up the body. To help you do that, for this week I have prepared a recipe for a salad with chickpeas and arugula hummus, which will enhance your resistance to cold, strengthen your immunity, and fix your mood. Also, it is very tasty.

Ingredients:

For salad:
2 handful baby mix salad
2 tbsp extra virgin olive oil
1 tsp apple vinegar
3 radishes, sliced
5 tbsp cooked chickpeas
¼ cup crumbled tofu cheese
pinch of red pepper flakes
pinch of salt
½ tsp fresh black pepper
2 tbsp arugula and chickpeas hummus
pinch of fresh parsley leaves and black sesame seeds for decoration

For arugula hummus:
1 cup cooked chickpeas
¼ cup roasted walnuts
2 handfuls arugula leaves
1 lemon, juiced
3-4 tbsp extra virgin olive oil
pinch of salt
pinch of fresh black pepper

Instructions:
In order to make the hummus blend all the ingredients and add spices as preferred. Then put the baby mix in a bowl and season it with extra virgin olive oil, lemon juice, salt and pepper. Add chickpeas, radishes, tofu and hummus. Serve. Spread finely chopped parsley leaves and black sesame seeds over it. Bon appetit!
