Baked sweet potato, stuffed with avocado and broccoli
A fantastic vegan dish for which you need only 4 ingredients – sweet potato, broccoli, avocado, and sriracha sauce. I love sweet potato because it is very similar to red or white potato, but contains much more protein. A big difference is that this sweet vegetable has a low glycemic index, which means it provides slow glucose absorption, which makes it suitable for diabetics.
Preparation time: 1h 15 minutes
Servings: 3-6 (if you cut the sweet potato in halves)
Sweet potato ingredients:
3 large sweet potatoes
1 ½ cup broccoli, chopped into florets, steamed
1 avocado, sliced
2-3 tbsp sriracha sauce, by sweet potato
Instructions:
1. Preheat the oven at 180 °C.
2. Clean sweet potato and sting with a fork in several places.
3. Put the sweet potato in a pan, previously lined with baking paper, and bake for about 45 minutes.
4. In the meantime, prepare sriracha sauce by the instructions below.
5. Before the end of baking, or while the sweet potato cools down, steam the broccoli for about 2-3 minutes.
6. Cut the sweet potato through the middle to make a hole. Stuff it with avocado and broccoli, and coat with sriracha sauce.
7. Serve and enjoy.
Sriracha sauce ingredients:
½ cup raw cashews, soaked in hot water
1 red pepper, chopped into small pieces
3 garlic cloves, minced
1 ½ – 2 tsp red chili pepper flakes
1 tsp agave syrup
½ tsp salt
1 tbsp apple cider vinegar
1 tbsp tomato paste
Instructions:
1. Put all the ingredients in a blender and blend until smooth.
2. Try it and adjust the taste if needed. Leave to cool down.
3. Serve the sriracha sauce with baked potato and enjoy.
