Banana bread

There’s nothing more beautiful than fresh bread flavor spreading through the house, right? I think so. Recently, I made a banana bread which tastes like cake. Extremely soft and eye tempting, it will serve you instead of dessert, and I suggest you eat it for breakfast as well.

Preparation time: 60 minutes
Servings: 10-12

Ingredients:
2 ripe bananas, mashed (1 cup)
1 banana, cut in half lengthwise for decoration (optional)
½ cup coconut sugar
¾ cup unsweetened almond milk
⅓ cup olive oil + for pan coating
1 tsp vanilla extract
1 tsp apple cider vinegar
⅔ cup oat flour
⅓ cup rice flour
½ cup almond flour
2 tsp baking powder
¼ tsp baking soda
½ tsp salt
½ tsp cinnamon
¼ tsp ground nutmeg
½ cup almonds, finely chopped
80 g dark chocolate, finely chopped

Instructions:
1. Heat the oven at 180 °C, and coat the bread mold with a small amount of olive oil.
2. In a large bowl, mix the mashed bananas with coconut sugar, almond milk, olive oil, vanilla extract, and apple cider vinegar, then stir until combined.
3. In another bowl mix the oat, rice and almond flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
4. Mix dry and wet ingredients and stir until combined, then add chopped almonds and chocolate. Pour the mixture into the prepared bread mold.
5. If desired, cut another banana in half, lengthwise and press it as decoration on top of the cake.
6. Bake for about 50 minutes, then check with a toothpick if the bread is baked in the middle.
7. Serve and enjoy.
