Banana carrot bread

What do you think about the carrot-banana combination in bread? If you haven’t tried anything like this yet, trust me, you will be pleasantly surprised. You can eat this bread as a cake, but also with the main meal if you don’t mind a little sweet taste. Look for the exact recipe below.

Preparation time: 1 h 20 minutes
Servings: 10-12

Ingredients:
2 cups spelt or wholewheat flour
2 tbsp cinnamon
1 tbsp baking soda
a pinch of salt
⅓ cup coconut sugar
½ cup unsweetened almond milk
¼ cup olive oil + a little more for coating the mold
3 medium-sized bananas, mashed
3 carrots, grated
¾ cup walnuts, finely chopped

Decoration:
a pinch of coconut sugar
¼ cup walnuts, finely chopped

Instructions:
1. Preheat the oven at 180 °C. Coat the bread mold with olive oil.
2. Add spelt flour, cinnamon, baking soda, and salt into a large bowl, and stir well until combined. Mix coconut sugar, unsweetened almond milk, and olive oil in a small bowl, and stir well. Add wet mixture and mashed bananas into dry ingredients, and stir until combined. After that, mix grated carrots into the resulting mixture.
3. Pour the resulting mixture into the bread mold, sprinkle with walnuts, and bake for about 50-55 minutes. Leave to cool down completely before serving.
4. Serve and enjoy.
