Beetroot and carrot salad

It is always a good time to boost your immunity so I suggest you to increase your intake of raw and fresh vegetables as much as possible. Make this beetroot and carrot salad and combine it with fish, meat, tofu or mushrooms. Anything to your taste. Enjoy every bite!

Ingredients:
1 large handful carrots
2 large handful grated beetroot
1 clove of garlic, minced
3 tbsp extra virgin olive oil
1 tsp balsamic or apple cider vinegar
3 tbsp fresh parsley leaves, finely chopped
salt and pepper

Preparation:
Mix grated carrots and beets in a bowl. In a separate glass prepare the dressing by mixing the garlic, extra virgin olive oil, balsamic apple cider vinegar and parsley leaves. Add salt and pepper. Pour the dressing over the vegetables and Add any additional protein.
