Beetroot noodles with curry
Be sure to include beetroot in the menu as it is one of the healthiest vegetables. It is excellent for liver health while improving the cardiovascular system. You can prepare it in a variety of ways, and I suggest you make noodles. Cut beetroots into strips, then add baby spinach and protein as desired. The boiled eggs fit perfectly. Ingredients:
1 tbsp melted coconut oil
1 beetroot, cut into tiny strips
4 handfuls of baby spinach
1 clove of garlic, minced
½ lemon juice
a pinch of Himalayan salt
1 boiled egg
1 tsp of black sesame seeds
Instructions:
Pour the melted coconut oil into the pan. When heated, add the garlic and then the beetroots chopped into tiny strips. Cover for 2 minutes, then remove the lid and stir for about 4 minutes until the beetroots soften. Then add baby spinach. Continue to boil for 1-2 minutes. Add lemon juice and Himalayan salt to taste. Stir well and serve with boiled egg or other protein of your choice, then sprinkle with black sesame seeds.
