Black rice with tofu cheese and vegetables

A fantastic combination that a few would decline! To prepare this meal you will need black rice, tofu cheese and seasonal vegetables. Here is the recipe for black rice with tofu cheese and vegetables. Try it.

Ingredients:
⅓ cup cooked black rice
1 pack of raw tofu cheese
3 tbsp olive oil
3 tbsp tamari sauce
3 tbsp apple cider vinegar
½ mango, diced
½ cup red cabbage, grated
a few radishes, sliced ​​into rings
1 handful baby spinach
½ cucumber sliced ​​into rings
1 tbsp extra virgin olive oil
1 tbsp lemon juice
a pinch of Himalayan salt

Coconut and peanut sauce:
⅓ cup coconut milk
2 tbsp peanut butter
2 tsp tamari sauce
1 tsp lime juice
1 tsp sriracha sauce, optional

Instructions:
Wash the black rice, then cook it as instructed in the package. Meanwhile, heat the oven to 200°C and place the baking paper in the baking sheet. Chop the raw tofu cheese into 2 × 2 cm cubes and pour it with 3 tbsp olive oil, 3 tbsp tamari sauce, and 3 tbsp apple cider vinegar. Then put the tofu in the pan and bake for about 20-25 minutes, until it turns a brown-golden color. Remove the pan from the oven and wait for the tofu to cool down. While the tofu cheese is baking, mix the ingredients for the coconut milk and peanut sauce. Serve black rice, mango, cucumber, radishes, baby spinach, red cabbage, and tofu cheese on a plate. Pour fresh vegetables with a spoonful of extra virgin olive oil and lemon juice, and season to taste. Serve with coconut milk and peanut sauce and enjoy the divine taste of this great dish.
