Broccoli cream soup
There is no other way to warm up on these cold days than to prepare and eat warm meals that are loaded with nutrients. I recommend you to replace raw foods and smoothies with cooked food, warm soups and stews. Here is one delicious recipe for broccoli cream soup! Enjoy.
Ingredients:
2 tbsp coconut oil
1 brown onion, diced
2 garlic cloves, minced
½ tsp Himalayan salt
1 broccoli head, cut into florets
2 white potatoes, peeled and cut into cubes
6 cups water
3 cm of fresh green chili pepper
1 bunch of parsley
2 tbsp lemon juice
a pinch of Himalayan salt to taste
Instructions:
Heat the coconut oil in a big pot. When the oil is melted, add onion and a pinch of Himalayan salt. Stir and cook for around 5-7 minutes or until the onion is tender. Add garlic, chili, potatoes and while constantly stirring, cook for 2 minutes. Add water and simmer for 15-20 minutes. Then, add the broccoli florets and cook for a further 3-5 minutes. Broccoli should be bright green. Remove from heat and use a stick blender to blend until smooth. Next, add parsley, lemon juice and season to taste.
