Broccoli kale pottage

Ingredients:
1-2 tsp olive oil
½ onion, finely chopped
3 garlic cloves, mashed
2 cups broccoli, chopped into florets
1 red bell pepper, finely chopped
¼ cup white wine
1 tsp red chili pepper flakes
2 cups kale, previously steamed and finely chopped
5 cups vegetable broth
a pinch of salt
a pinch of black pepper
1 ½ cup unsweetened full-fat coconut milk
5 tbsp nutritional yeast
2 tsp Dijon mustard
Serving ingredients (per cup):
1 tsp coconut milk
½ tsp olive oil
a pinch of black pepper
a pinch of pumpkin seeds
a pinch of white sesame seeds
a pinch of chili pepper, finely chopped
Instructions:
1. Pour the olive oil into a large pot, and heat at a moderate temperature. Add onion and garlic, and simmer for 1-2 minutes.
2. Add broccoli, red bell pepper, red chili pepper flakes, and white wine. Cook a few minutes.
3. Then, add kale and vegetable broth. Leave to boil, then cover with a lid and cook for 20-30 minutes, until broccoli softens.
4. Remove from the heat and leave until cool, then pour it into a blender and blend until smooth.
5. Pour the mixture into a pot, add coconut milk, nutritional yeast, Dijon mustard, salt, and black pepper. Cook until combined.
6. Leave the pottage until cool, decorate as desired, serve, and enjoy.
