Broccoli rice
Have you ever tried GREEN RICE? I already shared the recipe for cauliflower rice a long time ago, and today I present to you a similar one. This is a recipe for BROCCOLI RICE. This green, tasty and healthy dish goes great with fish, meat, but also fantastically complements the taste of baked tofu cheese.
Ingredients:
1 broccoli
1 tbsp melted coconut oil
2 spring onions, finely chopped
1 garlic clove, mashed
1 tbsp fresh cilantro, finely chopped
1 tbsp fresh basil, finely chopped
a pinch of salt and pepper
juice of 1⁄2 or 1⁄4 lime, optional
1 cup cooked integral rice
Instructions:
1. Wash the broccoli and chop it into florets, then dry it with a paper towel or clean cloth.
2. Transfer the broccoli to a blender and blend until you get the broccoli crumbs.
3. Heat the coconut oil in a pan, add the spring onion and garlic, and after 1 minute add the broccoli. Sautée the broccoli for a few minutes stirring frequently, then add fresh cilantro and basil, a pinch of salt and pepper, lime juice and integral rice.
4. Mix well and serve with protein and sauce as desired.
