Broccoli salad with spicy peanut sauce

Broccoli contains Vitamin C, K, folates, potassium and iron. This vegetable helps to prevent cancer, lowers cholesterol and strengthens the immune system. Try broccoli salad with spicy peanut sauce.

Ingredients:
1 ½ cups broccoli
1 tsp olive oil
1 chili pepper, finely chopped
1 handful roasted peanuts, coarsely chopped
1 tbsp of fresh coriander, finely chopped
2 tbsp peanut sauce
salt and pepper to taste

Ingredients for spicy peanut sauce:
½ cup peanut butter
½ cup rice vinegar
¼ cup maple syrup or another natural sweetener
¼ cup soy sauce
1 tbsp of tabasco sauce
1 spring onion, thinly chopped

Instructions for broccoli salad:
Heat olive oil in a frying pan, add broccoli and fry it for about 7-8 minutes. Season the broccoli with salt and pepper and then serve it in a bowl. Add the other ingredients and then sprinkle with peanut sauce.

Sauce Instructions:
Blend all the ingredients in a blender. Decorate the sauce with spring onions and serve. You can keep the sauce in the fridge for up to 2 weeks.
