Brown rice avocado grapefruit salad

You will love this salad, I promise! The recipe is below, and I suggest you add protein as desired.

Preparation time: 15 minutes + rice preparation time
Servings: 2

Ingredients:
1 cup brown rice
2 cups of baby spinach
1 red grapefruit, peeled and sliced
½ of avocado, chopped into thin slices

Dressing ingredients:
3 tbsp lemon juice
2 tbsp extra virgin olive oil
2 tsp raw organic honey

Preparation:
1. Cook the brown rice following the packaging instructions.
2. Mix all the dressing ingredients in a cup and set it aside.
3. Pour the brown rice and baby spinach into a larger bowl and pour over the dressing. Then add the grapefruit and avocado.
4. Serve and enjoy.
