Brown rice with arugula, parsley and lime
Anyone who has ever practiced a macrobiotic diet knows how important it is for whole grains to be prepared in different ways so we won’t get bored of them. Therefore, here is an idea of how to make BROWN RICE, but not in the way you are used to. ARUGULA + LEMON are our allies. I am sending you great vibes to cook this fantastic dish!
Ingredients:
1 cup brown rice
1 ½ cup water
3 tsp extra virgin olive oil
1 garlic clove, minced
2 spring onions, chopped
1 tsp lime zest
¼ to ½ tsp Himalayan salt
1 ½ tbsp lime juice
½ cup parsley leaves, chopped
1 cup arugula, finely chopped
pinch of red pepper flakes
Instructions:
Pour water in a cooking pan, add a bit of olive oil and brown rice, then cook it on a light heat for about 20 minutes. After that, add garlic, spring onions, parsley, arugula and lime zest, then stir everything. Leave the dish 1 minute to cool down, then add the rest of the olive oil, salt, lime juice, parsley leaves and red pepper flakes. Season by your taste. Serve.
