Brown rice with tofu cheese and fresh vegetables

Servings: 2

Ingredients for marinated tofu cheese:
¼ to ⅓ cup tamari soy sauce
1 tbsp apple cider vinegar
½ tbsp Tabasco sauce
1 tsp sesame oil
2 garlic cloves, mashed
1 cm ginger root, grated
⅓ red onion, chopped into crescents
200 g organic tofu cheese, diced

Remaining ingredients:
1 ½ cup cooked brown rice
½ cucumber, chopped into thin rings
½ cup carrots, grated
3-4 radishes, chopped into thin rings
¼ small red cabbage head, chopped into strips
1 avocado, diced
1 tbsp black sesame seeds
⅓ cup parsley leaves, coarsely chopped

Instructions:
1. Strain tofu cheese and cut it into equal cubes.
2. Mix tamari soy sauce, apple cider vinegar, Tabasco sauce, sesame oil, garlic, ginger, and red onion in a bowl. Add tofu cheese in the resulting marinade and stir. Leave in the fridge to rest for 60 minutes minimum.
3. Pour cooked brown rice, cucumber, carrots, radishes, red cabbage, avocado, and parsley leaves in a large serving bowl. Add marinated tofu cheese and sprinkle with black sesame seeds.
4. Serve and enjoy.
