Brownies with almonds and sour cherries
All chocolate treats lovers adore brownies! However, many avoid making and eating them because of the excessive amount of sugar they usually contain. I came up with a healthier recipe for this dessert, which contains coconut sugar, instead of white, and Ghee instead of regular butter. I added the sour cherries. However, don’t overconsume it because the cake is high in calories. Enjoy!
Preparation time: 60 minutes

Ingredients:
80 g Ghee butter + and a bit for tray covering (For vegan recipe use coconut oil instead of Ghee butter.)
2 tbsp flax seed, ground
6 tbsp water + ⅓ cup of water
120 g vegan dark chocolate, crushed
½ tsp coffee beans
125 g whole grain rice flour
½ tsp baking soda
a pinch of salt
70 g almonds, ground
50 g cacao powder
¼ tsp baking powder
250 g coconut sugar
1 ½ tsp vanilla extract
70 g frozen sour cherries, pitted
Ingredients for chocolate topping:
50 g dark chocolate
1 tsp Ghee butter (For vegan recipe use coconut oil instead of Ghee butter.)
Instructions:
1. Preheat the oven at 180 °C. Cover the square tray with coconut oil or line it with baking paper.
2. Mix the flax seeds with 6 tbsp of water and leave them to rest for at least 5 minutes.
3. Put the vegan dark chocolate, coffee, Ghee butter, and ⅓ cup of water in a pot and stir at moderate temperature until chocolate melts and the ingredients combine. Leave to cool slightly.
4. Mix the whole grain rice flour, ground almonds, cacao powder, baking powder, baking soda, and a pinch of salt in a bowl, stir well to break the grumps.
5. Then add the coconut sugar to the mixture with melted chocolate and mix until smooth and until coconut sugar melts.
6. Add the mixture of flax seeds and water, vanilla extract, sour cherries, and then the flour mixture. Stir well.
7. Pour the mixture into the prepared tray and bake for about 35-45 minutes.
8. Leave the brownies in the tray until cool, then cut it and top with steamed chocolate mixed with a teaspoon of coconut oil or Ghee butter, if desired.
9. Serve and enjoy.
