Bruschetta with cherry tomatoes
Begin the day with aromatic bruschetta! Smells and flavors of baked whole wheat baguette, cherry tomatoes, basil, garlic and extra virgin olive oil will take you to the Mediterranean. Indulge in delicious bites and enjoy!
Ingredients:
3 handfuls cherry tomatoes, diced
1 handful fresh basil leaves, chopped
1-2 garlic cloves, minced
1 dl extra virgin olive oil
Himalayan salt and pepper as preferred
1 tbsp balsamic vinegar
1-2 whole-wheat baguette, sliced
Instructions:
In a medium-sized bowl mix diced cherry tomatoes, basil and garlic. Pour 5 tbsp extra virgin olive oil over it, 1 tbsp balsamic vinegar and Himalayan salt as preferred. Cover and leave the bowl in a fridge. It can be left for up to eight hours before serving. After that, slice the baguette, cover each slice with extra virgin olive oil, then layer in a dish with baking paper. Bake them for 2-4 minutes at 220°C, until golden and crunchy. It will melt since the baguettes are hot. Serve them with a mixture of cherry tomatoes, basil and garlic.
