Buddha bowl 1

Let’s welcome summer and warm weather! 🙂 Full adjustment to the season provides a strong immune system, resistance to many diseases, high energy level and a good mood. Therefore, here’s the first in a series of Buddha Bowl salads!

Ingredients:
½ avocado, chopped into slices
4 tbsp cooked beans
1 handful grated carrot
2 handfuls baby spinach
½ red peppers, chopped into slices
½ cup red cabbage, chopped into strips
1 tbsp extra virgin olive oil
1 tsp of lemon juice
salt to taste

Side dish:
Radishes and smoked tofu

Instructions:
Serve baby spinach on a plate, then place beans and other vegetables around it. Drizzle everything with a dressing made from extra virgin olive oil and lemon juice. Season to taste and serve.
