Burrito with sweet potato, black beans, and avocado
If you’ve noticed that protein breakfasts suit you better, opt for a vegan burrito that will keep you full until lunchtime. Containing avocado, sweet potatoes, and black beans, this burrito is a healthy meal full of nutrients for your body.
Ingredients:
6 corn or integral tortillas
3 medium-sized sweet potatoes
1 cup black beans, pre-cooked
¼ tsp cumin
¼ tsp chili powder
1 red pepper
1 avocado, diced
Instructions:
Cook sweet potatoes with crust, then peel and mash them with a fork. In a separate large bowl, add black beans, cumin, and chili powder. Stir everything together. For an easy making of burritos make sure you have warm tortillas so they are easier to roll. Spread the sweet potato puree evenly over the tortilla. Add avocado, black beans and pepper. Season with salt and black pepper as preferred. Serve with salsa or hot sauce. Enjoy!
