Caesar salad with chickpeas

Every meal has its vegan variant, including Caesar salad. Instead of chicken and bacon, in this recipe, I used chickpeas, which will satisfy your protein needs. This combination is very nutritious and delicious.

Preparation time: 20 minutes
Servings: 2-4

Ingredients:
2 cups cooked chickpeas
4 cups (around 500 g) lettuce, separated in leaves
1 tbsp olive oil
1 tbsp lemon juice
¼ cup vegan parmesan
1 tsp caper (optional)

Dressing ingredients:
1 cup raw cashews
1 tsp Dijon mustard
½ tsp salt
½ tsp black pepper
2 garlic cloves, mashed
6 tbsp lemon juice
3-4 tbsp olive oil
½ cup hot water
1 tsp miso paste
1 tsp agave syrup

Instructions:
1. Cook the chickpeas following the packaging instructions.
2. Mix all the dressing ingredients and blend until smooth.
3. Put the lettuce leaves in a large bowl, then cover them with olive oil and lemon juice. Then add the chickpeas, vegan parmesan, and the resulting dressing, and stir well. If desired, sprinkle a teaspoon of caper on top.
4. Serve and enjoy.
