Cauliflower chickpea salad with lemon dressing

Salad ingredients:
1 medium-sized cauliflower, chopped into florets
½ tsp salt
½ tsp black pepper
1 ½ cup cooked chickpea
½ cup parsley leaves, finely chopped
½ cup red onion, chopped into rings
Lemon dressing ingredients:
a pinch of salt
1 tsp grated lemon peel
¼ cup lemon juice
¼ cup extra-virgin olive oil
¼ tsp red chili pepper flakes
Decoration:
2-3 lemon slices
Instructions:
1. Remove cauliflower core, chop it into florets which you’ll put in a big bowl. Chop the cauliflower core finely and add it to the bowl. Season it with salt and black pepper.
2. Pour all the dressing ingredients into a smaller bowl and stir until combined.
3. Add the chickpea, chopped red onion, and parsley leaves into the bowl with the cauliflower. Season with dressing and stir well.
4. Serve and enjoy.
