Cauliflower salad with almonds
The unusual combination of cauliflower and almonds will provide you with enough carbohydrates and healthy fats, necessary for the optimal functioning of the body. Inspired by a seminar about “Insulin resistance and diabetes” which I held recently, I came up with this recipe, keeping in mind combining foods of different glycemic indexes, which I will write about in the next period. You are free to serve whichever protein you wish (meat, fish, poultry, mushrooms) with this salad. That way you will respect the formula which guarantees a stable level of blood sugar: unrefined carbohydrates + healthy fats + non-fat protein.
Ingredients:
½ head of cauliflower
¼ chili pepper, finely chopped
8 radishes, diced
2 tbsp spring onions, sliced in tiny rings
1 handful almonds, largely minced
2 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
salt and pepper as preferred
Instructions:
Blend smaller cauliflower flowers in a blender, chop chilli pepper, radishes, spring onion, and blend the almonds. Put all the ingredients together in a bowl, add salt, apple cider vinegar and pepper, and enjoy this delicious salad with your choice of protein (meat, fish, mushrooms).
