Celery soup

If you are looking for a great spring recipe this celery soup is a perfect choice for you. It is a creamy, tasty and very nutritious dish. Instructions are really simple and you will definitely enjoy it.

Ingredients:
1 celery stick, chopped in cubes
1 large potato, chopped in cubes
1 medium-size onion, diced
1 tsp ghee butter
Himalayan salt
3 cups chicken stock or water
¼ cup fresh dill, finely chopped
½ cup vegan sour cream
celery leaves and extra virgin olive oil for garnish

Instructions:
In a medium-size pot warm the ghee butter. Add vegetables (celery, potatoes and onion) and saute on a medium temperature. Add salt and stir occasionally until the onion is tender. Add 3 cups of chicken stock or water and cook until all the vegetables are tender 8-10 min. When the vegetables are cooked enough add chopped dill and blend everything with a stick mixer, then, add vegan sour cream and stir it in. Garnish the soup with olive oil and celery leaves.
