Chard rolls with tahini sauce
Chard rolls with tahini sauce are a real summer refreshment, which you can prepare in only 30 minutes. Use vegetables of different colors, because the more colors on your plate, the more likely you are to take in a variety of nutrients.
Preparation time: 30 minutes
Servings: 6 rolls
Ingredients:
2 large chard leaves
2 tbsp hummus
¼ cup grated beet
¼ cup grated carrots
¼ cup red pepper, chopped into strips
3 tbsp avocado, chopped into pieces
1-2 tbsp Sauerkraut
Tahini sauce ingredients:
3-4 tbsp green curry paste (Look for the recipe below.)
1 tbsp tahini paste
1 tbsp lemon juice
½ tsp agave syrup
Instructions:
1. Wash the chard and cut the stems.
2. Chop and grate the rest of the vegetables.
3. Put all tahini sauce ingredients in a bowl and mix well. If the mixture is too thick, add water. Set aside.
4. Spread hummus at the ends of chard leaves, then arrange beets, carrots, red pepper, avocado, and Sauerkraut.
5. Fold the chard leaves over the ingredients, and roll. Cut into small pieces.
6. Serve with tahini sauce and enjoy.
Green curry paste ingredients:
½ tsp coriander, ground
1 tsp cumin, ground
½ tsp black pepper
3 small green chili peppers, cleaned, finely chopped
1 green pepper, cleaned, finely chopped
1 garlic clove, mashed
2 spring onion stems, finely chopped
1 tsp ginger, ground
1 tsp turmeric, ground
½ tsp salt
3 tbsp lemon juice
1 lime – juice and grated peel
2-3 tbsp grapeseed oil
1 tbsp coconut sugar
Instructions:
1. Mix all the ingredients in a blender and blend until paste forms.
