Cherry tomato basil potage
Instead of classic tomato soup, which I believe you prepare often, try this invigorating CHERRY TOMATO BASIL POTAGE. The smell and taste will knock you off your feet. It knocked me! Look below for the recipe.
Ingredients:
1 tbsp coconut oil
1 large onion, sliced
1 garlic clove, mashed
500 g cherry tomatoes, cut in quarters
10-12 large basil leaves
½ tsp dried oregano
1 l water
salt, black pepper, and lemon juice to taste
Decoration:
The mix of microgreens and basil leaves with fresh ground black pepper
Instructions:
1. Heat the coconut oil in a pot at moderate temperature, then add onion and garlic to simmer for about 5 minutes.
2. Add the rest of the ingredients: cherry tomatoes, basil, oregano, salt and black pepper to taste, and water.
3. After boiling, cover with a lid, lower the temperature and leave to cook for about 12 minutes.
4. Blend the potage with a stick mixer or in a blender until it gets desired consistency, then add more salt, black pepper, and lemon juice to taste.
