Chicken bone broth

Our grandmothers prepared chicken bone broth in different ways since they knew that broth includes numerous health benefits. This dish is part of our culinary tradition, but lately, it has become very popular in the world as well. Look for the recipe below.

Servings: 8-10

1 kg chicken bones and meat (legs, wings, neck, backbones)
2 celery sticks, chopped into small pieces
2 carrots, chopped into small pieces
2 small onions, chopped into small pieces
2 bay leaves
½ tsp dry rosemary
½ tsp dry thyme
8-10 black peppercorns
8 cups water

1. Put all the ingredients in a large pot and leave to boil. Lower the temperature and leave uncovered to cook for about 3-4 hours, until foam appears.
2. Remove the vegetables and chicken from the pot, and leave to cool down. Remove the meat from the bones, and leave the bones for other uses.
3. Strain the broth, and leave it in the fridge overnight. Remove the fat of the surface before consuming.
4. Serve and enjoy.
