Chicken with mixed vegetables

This is the recommendation for lunch or dinner, which you will especially like if you’re a meat-lover. I combined chicken with cooked sweet potato and brussels sprouts. Don’t forget some delicious salad on the side.

Preparation time: 45 minutes
Servings: 6-8

Ingredients:
1 ½ kg chicken white meat, chopped into fillets
1 tbsp olive oil
1 ½ cup chicken broth or water
1 tbsp cornflour
2 tbsp ground garlic
1 rosemary sprig, finely chopped
1 ½ tsp fresh thyme, finely chopped + a little more for decoration
1 sweet potato, diced
2 cup fresh or frozen brussels sprouts

Instructions:
1. Season the chicken with salt and black pepper, as desired.
2. Heat olive oil in a deep pan at moderate temperature. Add the chicken and fry it for 10 minutes, or until the chicken gets golden on both sides. Remove the chicken from the pan.
3. Pour chicken broth or water and cornflour in a bowl, and stir until combined.
4. Pour the resulting mixture in the pan in which you fried chicken, add garlic, rosemary, thyme, sweet potato, and brussels sprouts, and leave to boil. Cook for 5 minutes.
5. Lower the temperature to the minimum. Put the chicken back in the pan. Cover with a lid and simmer for another 10 minutes or until chicken and sweet potato soften.
6. Serve and enjoy.
