Chickpea, spinach, and sweet potato curry
How often do you eat legumes? If you’re vegan or vegetarian, I recommend that it be at least 5 times a week, because that way you’ll provide enough protein to your body. Let this dish be on your meal list. Enjoy!
Preparation time: 45 minutes
Servings: 4-6
Ingredients:
¼ cup water
⅔ cup onion, finely chopped
1 tbsp fresh ginger, grated
3 garlic cloves, mashed
4-6 cup green curry paste (Look for the recipe below.)
2 medium-sized sweet potatoes, peeled and diced
2 tbsp balsamic vinegar
1 tsp curry powder
1 ½ cup unsweetened coconut milk
½ cup vegetable broth or water
2 cup chickpeas, already cooked
½ tsp agave syrup or coconut sugar
3 cup baby spinach
Decoration (optional):
A pinch of red chili pepper flakes
A pinch of fresh ginger, grated
Instructions:
1. Pour the water in a large pot, add onion and ginger and simmer at moderate temperature, stirring frequently for 3-4 minutes, until onion becomes transparent.
2. Add the garlic and simmer for a few more minutes. Then add green curry paste and stir. Cook for 2 more minutes.
3. Add the sweet potato, 1 tbsp balsamic vinegar, and curry powder, then stir until all the ingredients combine. Cook 2-3 minutes. Then add unsweetened coconut milk, vegetable broth or water, and another tablespoon of balsamic vinegar and stir. Cook at moderate temperature until boil.
4. Add the chickpea and lower the temperature.
5. Cover with a lid and cook for 10-12 minutes, stirring occasionally.
6. After that, add the agave syrup or coconut sugar. Add the spinach, then cook for another 2-3 minutes. Turn off the stove and leave uncovered to rest for a few minutes before serving.
7. Decorate as desired, serve and enjoy.
Green curry paste ingredients:
½ tsp ground coriander
1 tsp ground cumin
½ tsp black pepper
3 small green chili pepper, cleaned, finely chopped
1 green pepper, cleaned, finely chopped
5 garlic cloves, mashed
6 spring onion stalks, finely chopped
1 tsp ground ginger
1 tsp ground turmeric
½ tsp salt
3 tbsp lemon juice
1 lime – juice and grated peel
2-3 tbsp grapeseed oil
1 tbsp coconut sugar
Instructions:
1. Mix all the ingredients in a blender and blend until you get the paste.
