Chocolate pumpkin bread with spices
I am sharing another fantastic bread recipe with you. This time, it’s chocolate bread with pumpkin and various spices, from which I’d like to single out the cinnamon. It can be vegan too! Look below how you can prepare it.
Preparation time: 60 minutes
Servings: 10-12
Ingredients:
2 ½ cup pumpkin puree (Steam the pumpkin, then blend it.)
½ cup melted coconut oil
½ cup agave syrup
2 eggs or 2 flax eggs for a vegan recipe (6 tsp of flaxseed mixed in 18 tsp of water)
2 tsp vanilla extract
1 ½ cup whole grain rice flour
2 tsp baking powder
1 tbsp cinnamon
¼ tsp nutmeg
¼ tsp ground ginger
¼ tsp ground clove
¼ tsp ground cardamom
¼ tsp ground anise
½ tsp salt
½ cup vegan dark chocolate pieces

Coconut protein
Instructions:
1. Heat the oven at 180 °C and cover the bread mold with baking paper.
2. Mix the pumpkin puree, melted coconut oil, agave syrup, eggs, and vanilla extract in a larger bowl, then mix until the ingredients are combined. Add the whole grain rice flour, baking powder, cinnamon, nutmeg, ginger, clove, cardamom, anise, and salt, then mix until the ingredients are combined.
3. Mix in the chocolate pieces.
4. Fill the mold with dough and put it in a heated oven to bake for about 40-45 minutes.
5. After 30 minutes, sprinkle the chocolate pieces on top and put the mold back in the oven.
6. Take the bread out and leave to rest for at least 30 minutes before cutting.
7. Decorate with coconut protein, if desired, and enjoy.
