Chocolate pumpkin muffins
When you combine chocolate and pumpkin flavor and add chia egg, which is made by mixing chia seeds and water, you get a great muffin mixture, which no one will resist. You can prepare muffins in a million ways, with various ingredients, but this combination is an excellent choice if you want a real winter dessert. Look below for the recipe.

Ingredients:
Chia egg:
2 tsp chia seeds, ground
3 tbsp water
Wet ingredients:
1 cup pumpkin puree (Steam the pumpkin, then blend it.)
¼ cup coconut oil, melted
½ cup agave syrup
1 tsp vanilla extract
Dry ingredients:
1 ½ cup oat flour
½ cup raw cacao powder
½ cup coconut sugar
2 tsp gingerbread spice mix
1 tsp baking powder
½ tsp baking soda
½ tsp salt
⅔ cup dark vegan chocolate pieces
Decoration:
1 tsp coconut protein
1 tsp pumpkin puree
Instructions:
1. Mix ground chia seeds and water in a bowl, then stir until combined. Leave the mixture to thicken.
2. Add all the wet ingredients to the same bowl and mix until smooth.
3. Then add all the dry ingredients, except dark vegan chocolate pieces, and stir until you get a homogenous mixture.
4. Mix in ⅓ cup dark vegan chocolate pieces.
5. Line the muffin molds with muffin baskets, pour the mixture into baskets to ⅔ of their volume, then add the rest of the chocolate pieces.
6. Bake at 180 °C for about 20-25 minutes.
7. After baking, take the muffins out of the mold and leave them to cool down.
8. If desired, sprinkle coconut protein on top, decorate with pumpkin puree and enjoy.
