Cold corn potage
When temperatures are high, prepare cold potages, which will refresh and provide you with the necessary energy. This time, I mixed corn, yellow tomato, yellow pepper, and cucumber and as a result, I got a fantastic meal, which you can eat at any time of the day.
Preparation time: 20 minutes
2 cup baby corn, cooked
2 yellow tomatoes, finely chopped
1 yellow pepper, seeds cleaned, finely chopped
1 cup cucumber, peeled, finely chopped
¼ cup extra-virgin olive oil
2 tbsp apple cider vinegar
½ tsp salt
½ tsp black pepper
⅓ cup yellow pepper, finely chopped
A few leaves of fresh dill
1. Put all the ingredients in a blender and blend until smooth.
2. Sprinkle the potage with finely chopped yellow pepper and decorate with dill.
3. Serve and enjoy.
